
This year our ward Halloween party was a Chili & Cornbread cook off. Guess who took first place? That's right.....yours truly! It's kind of funny because I originally set out to make a different recipe. I had all the dry ingredients measured when I realized I didn't have any sour cream that the recipe called for. Cannon was taking a nap and I couldn't run to the store, so I frantically searched through my collection of ward cookbooks looking for a recipe I had all the ingredients for. I came across a recipe called "Marie Callender's Corn Bread," originally submitted by Lyn Chapman. It looked like a good recipe and I had all of the ingredients so I decided to give it a whirl. I was a little bit surprised when they announced my name as the winner! The recipe makes a ton of cornbread. Supposedly it freezes well, but I haven't tried that yet. I thought I would include the recipe if any of you want to give it a try. Hope you enjoy!
Award Winning Cornbread2 cups flour
2 cups corn meal
1 tsp. salt
7 tsp. baking powder
1/2 cup sugar
2 cups milk
1/2 cup oil
2 eggs
1 yellow cake mix
Eggs, oil, and water (for cake mix)
Mix yellow cake according to directions on box. Combine other ingredients and add to cake batter. Bake at 425 degrees for 30-35 minutes. Makes 2 (9x13 inch) oblong or 4 (8 inch) square or round pans. Freezes very well.
